Steamed Mustard Eggs in Coconut milk {Recipe}

Recipe:

Beat 2 eggs well with a little milk. Add a pinch of salt, chopped green chillies, chopped onions, fresh coriander, some garlic paste (optional. I like garlic, so…), some grated coconut and about 2 tsps of mustard paste (this mustard paste already had some haldi, chilli powder and raw mustard oil mixed in it).

Steam in a vessel with tight fitting lid in pressure cooker. One whistle on high and then about 5-7 mins on low and switch off gas. Turn steamed egg cake onto a plate and let it cool. Cut in diamond shapes.

In the meantime, heat some oil and add garam masala. make a malai curry kind of gravy. what i did was added just a bit of onion paste (half an onion), two tsps ginger paste, chilli powder and fry till masala done. Add coconut milk. Let it cook. Add salt and sugar to taste.

I scraped off the layer of steamed eggs sticking to the bottom of the vessel I cooked them in and added the crumbled bits to the gravy. Slide in the eggs. Cook for a while. take off fire with garam masala powder and green chillies.

You need not make it this way at all. You can steam the eggs with anything and make any kind of gravy.
