You have heard about Kashmiri Aloo Dum, you have heard of Bengali Alur Dum and now presenting AP’s “Chaat waale Dum Aloo ”!!…typically available as a part of chaat in Uttar Pradesh
When AP posted the photo on the group and said “Bestest Dum Aloo ever” the demands for recipe started flowing and once the recipe was up, the feed-backs are flowing. Do try, if you haven’t already!!!
250 gm Baby potatoes
2 large size Onion
Ginger, according to taste
5-6 Green Chilies (It has to be hot, so adjust the quantity according to the variety of chilies you get)
50-60 gm of Mustard oil
2 tsp Coriander powder
4 tsp Cumin powder
1 tsp Turmeric powder
3 tsp Mango Powder/Aamchur
Salt, to taste
Coriander leaves for garnishing
Boil the baby potatoes, peel them and keep aside.
Make a paste of Onion, Garlic and Green Chilies. In a wok heat mustard oil, and add this paste.
Sauté for 5 minutes then add the remaining spices and further roast it till the oil separates
Add 3 cups of water bring it boil and then add the parboiled baby potatoes in it.
Remember, it is not running gravy to keep stirring so that the water evaporates and leaves a thick mix of paste around the potatoes.
Once done, add the lemon juice and mix well. Garnish with coriander leaves and serve.
