Café Uno at Shangri-La’s-Eros Hotel, Delhi: DAWAT-E-AWADH

Gosht Dum BiryaniAWADH resonates splendour and opulence that reflected in each quarter of Nawabs’ lifestyle. Awadhi cuisine reverberates to richness and grandeur. Inspired by Mughlai and Kashmiri cuisines, Awadhi cuisine introduced Dum style of cooking to world.

The same grandeur is now being celebrated at Café Uno at Shangri-La’s-Eros Hotel, New Delhi. Presenting DAWAT – E – AWADH the Chefs have attempted to introduce the age old authentic flavours using new technology that shall help retain the distinct flavours of delicacies yet suite the modern life style demanding low calories.

I got an invitation for preview of the festival that shall serve a buffet along with live counters to showcase the culinary skills of Awadhi preparation. The festival boasts to serve variety of traditional starters, main course, breads and desserts that shall not get repeated from one dinner to other.

Mirchon Ki RangoliIn starters we were served Kabab E Kalmi, Mahi Sunahri, Mirchon Ki Rangoli and Paneer Kakori and the main course comprised of NihariGosht, MurghRizala, Nimona and Gosht Dum Biryani (khuskhus, curd, cashew nut paste). The kebabs were mild on spices and rich on taste.  While both Mirchon ki Rangolian assortment of stuffed bell peppers and Paneer Kakori was a new version of vegetarian gourmets; Mahi Surmai and Kabab E Kalmi had retained the legitimacy of Awadhi taste.

Nihari Gosht 2The Murgh Rizala was incredible but I was slightly disappointed with Nihari Gosht since the prepration was not matching the standards of taste. Nimona was again a new dish with moong dal wadi cooked in crushed green peas curry. The mild flovour of cashew added to the taste of dish. I enjoyed Rizwani Parantha, one of the traditional breads from Awadh prepared in desi ghee, saffron, sugar, milk and salt.

Rizwani ParanthaThe festival shall offer variety of traditional breads like bakarkhani, khamiri, kandhari, roomali and shirmaland age old deserts like Sabu Dana Phirni, Shehadwala Murgh, Sheer Khurma, Anjeer aur Badam ka Halwa, Chenna Malai Kheer, Suji aur Makki ka Halwa for its guest to choose from. On the offering shall also be some sharbets and traditional drinks to savour.
