Made in India, Radisson Blu MBD, Noida – Very Indian

Behari KebabNoida is finally waking up to good eating joints. Not that Radisson MBD offered anything less, but the new menu at Made in India restaurant, is much better.

The rooftop at the restaurant depicts Devanagiri script along with images of Indian musical instruments. The décor which hasn’t changed for some time now, gives a feeling of entering into an old palace. On asking what is different at Made Roofin India, Corporate executive chef Rajesh Variyath who joins me at the table says, “Our menu is built on philosophy of Memories and Prophecies”. And he explains, “We have incorporated some of those recipes which are not much remembered and worked on them to bring subtle innovations without making it a fusion cuisine”.

Veg PlatterThis all sounded good, but the litmus test is to get food on the table and taste it. We started by ordering a platter of Veg and Non-Veg kebabs (850/1050) along with Kunna Gosht (1295). Starting with Dahi ke kebab which has bites of pomegranates and muttar kebab with cheese filling, I now knew what chef mentioned moments ago. The dishes tasted like how they should, without the twist overpowering the main dish. Tiger Prawns had excellent flavours of black pepper while Galouti was just melt-in-the-mouth. If the Galouti was served on top of ulte tawe ka parantha, the taste would get further accentuated. Only miss so far was the fish tikka which retained water.

Urad Dal PalakKundan Kaliyan (775) was served with golden varq while Nihari (795) was good without being exceptional. The star dish here was Urad Dal Palak (450). Not had this combination for a long time in a restaurant and this was not only made well, but went great with both lal mirch ka parantha and Kabali naan.

Intermittently I kept conversing with Chef Shams Parvez who acknowledged he went to Pakistan to research on many of these dishes. He indeed is a very knowledgeable person on Indian cuisine, who am sure will see much bigger heights.

PhirniThe in-house made kulfi tasted so much like Parsi kulfi (295), only that this one came in scoops instead of normal stick. Phirni (295) is again a good dessert to end this Made in India meal for Indians and foreigners alike. With great food going around, I sincerely wish the service levels matches this starred hotel.
