Indian Food Freak was recently invited by NDTV Good Times to their event – ‘Meet the Chef’ at Westin Gurgaon. Ritu Dalmia with her effervescent personality took over the stage and demonstrated with ease and lovely tidbits of various Italian dishes.
With her opening statement “For 20 minutes you belong to this pan!! “ she proceeded to produce the most amazing Red wine and pumpkin Risotto I’ve tasted. She started with a Risotto from the Veneto/Verona region. Ritu shared her secret that first dish as a young girl she cooked was a Risotto which was termed as really bad Khichdi. And the rest is history.
Next dish was a lively and fresh Panzanella salad. This 16th century recipe had cubes of bread, tomato puree, capers, olives balsamic vinegar, basil and seasoning followed with a Barley/Avocado Salad and a Spaghetti Carbonara.
It was a lovely opportunity for Ritu Dalmia fans to meet her face to face and learn few cooking tips.
