Everyone loves their Channa/Choley and one of the most repeated question I have been asked is if I know the ‘authentic’ recipe of Punjabi Choley. There are so many variations as per each home, but this recipe shared by our dear friend Jaspreet Nirula is the closest anyone can get. It has all colours, flavours and ingredients which goes into making a good dish. Do try it and let us know your views.
Three handful of white channa (soaked overnight).
Boil them with 4 tea bags along and salt. Do not pressure cook, just boil them normally without using any cooking soda. It will take time but the end result will be good with dark colour of choley.
Separate chana and discard the water.
Then in the boiled channa mix 1tsp red chilli powder, 2 tsp dhania powder, 2 tsp amchur powder, 2 tsp jeera powder, 1 tsp garam masala powder, 2 tsp chole masala (MDH or any brand) and salt to taste.
Mix well and add ginger julienne, slit green chillies and 2 tomatoes cut into 8 pcs each. Mix all of these and keep aside.
Now heat 100ml ghee (you can use more), add a tsp of ajwain and then add this chole mixture and bhunno it for 5-6 minutes.
Adjust seasoning and add green corriander. Mix some lemon juice according to taste and serve hot.
